Tortilla Triangles Snack

This is just a quick lunch that I put together for myself on a day off from work, and it turned out delicious. I also think this would be a great hors d’oeurve or appetizer to serve at a party.

I had some flour tortillas leftover in the fridge, so I topped it with some part skim mozzarella, roasted red peppers, and prosciutto, and baked it for a few minutes.

Of course, you can do any combination you want. I think this is a great way to do a bit of fridge/pantry clean out or you can fancy it up for a party.

Here is my recipe, but this can really be done by eye. Just get out your ingredients and top it with an amount that looks right. It is a good idea to put your cheese down first, so that it protects the tortilla from getting soggy from any other ingredients that may retain moisture.

Prosciutto, Roasted Red Pepper, and Mozzarella Baked Tortilla Triangles
Serves 2 people

2 flour tortillas
1/2 cup part skim mozzarella cheese
1 1/2 – 2 whole roasted red peppers
4 slices of prosciutto
Preheat oven to 350F.
Lay out your tortillas on a baking sheet.
Sprinkle with mozzarella to cover the tortilla. Next place your roasted red peppers on top of the cheese and then place 2 slices of prosciutto on each tortilla.
Bake for about 5-7 minutes or until the cheese is melted and the prosciutto has crisped up slightly.
Cut in quarters with a sharp knife or pizza wheel.
